Beet and Avocado Smoothie

This morning I wasn’t feeling anything in particular for breakfast. I stood peering into the refrigerator for a good 3 minutes and still nothing jumped out at me. After a few minutes more of groggy deliberation, I decided to try a recipe that I found in last month’s issue of Vegetarian Times: a blueberry beet smoothie. The recipe was actually part of a cleanse plan they had published, but I’m not super into cleanses. However, I did like the fact that the smoothie was cleansing… it can never hurt, right?

I like beets; if you don’t, I don’t recommend this smoothie for you. It’s not overwhelming beet-y, but there is a lingering taste of root vegetable in it that one cannot deny. Another interesting ingredient in this recipe is avocado. I’ve never tried avocado in a smoothie before, although I have certainly heard of it. After trying it, I can guarantee you that I will be adding avocado to more of my smoothies because it lent a beautiful light creaminess to it that blew my mind!

Served along side two slices of toasted Udi’s bread with peanut butter and a cup of green tea, this smoothie was the perfect breakfast I didn’t know I wanted!

Blueberry-Beet Smoothie
adapted from Vegetarian Times

1/2 medium roasted beet (4 oz.)
1/2 cup fresh or frozen blueberries
1/2 cup nut, oat, rice, or hemp milk, or water (I used unsweetened almond milk)
1/4 avocado, cubed
½ Tablespoon lime juice
honey to taste, optional
2 ice cubes

Cut 1/2 beet into large chunks. Transfer beet chunks to blender, and add all remaining ingredients; blend on high until smooth.

Later tonight I headed to the gym for a leg workout. I decided to sneak a little bit of Aaron’s preworkout supplement just to shake things up a bit. His preworkout includes creatine, which is what I attribute my awesomeness tonight to. While I didn’t blow any squat PRs out of the water or anything, I felt great through my whole workout which lasted over an hour and a half. I was even buzzing for another 20 minutes after I got home from the gym!
